Prints are just prints on regular paper from a regular printer. I should probably upgrade them.

You can get wall mounts with arms that have cylinders so you can move them up or down. ErGear Monitor Wall Mounts with Arms. Try this one. Obviously you need two of them but this brand will let you move the monitors up and down. I have this setup for my sons computer in my basement. He has the same desk from Costco and that’s how I know it would work. Mount in the middle of the wall and adjust it to standing height when you need to.
Monitor wall arm would like nice on the wall like this ErGear Monitor Wall Mount Bracket for 17 to 32 Inch Screens, Height Adjustable Full Motion Articulating Gas Spring Single Stand w/Extended Arm Extends Up to 18.3 Inch Fits Four VESA Mounting Sizes https://www.amazon.com/dp/B08G14FLD4/ref=cm_sw_r_cp_api_glt_fabc_N6ABQR7RAM42W3NGFK57 or there are other ones that attach to your desk
Ps. Nice setup
You could use a wall mount like this one Gas Arm Wall Mount
If you can't mount directly to the wall you could use the same idea of an extra piece bolted available spots on the desk back between the wall and desk, then mount the wall mount arm to that! A little paint and you could hide that away pretty easy. I did something similar for my lab station at work with an even cheaper version if what I linked.
This is it, OP posted lower down
This is a list of everything I used in this set up

I also cleaned up the wires a-little but after suggestions. I know visually it’s not perfect but I can watch tv with the family or if the kids are watching cartoons I can enjoy a game. I appreciate any suggestions I’m thinking of getting a small shelf to hold games on and a drink. The main man cave is in a separate room so this was meant to be small and cozy.
This is a comment somewhere floating in my post but here ya go

They have a wall mounted version 20% off right now, but you would need two of them. https://www.amazon.com/dp/B08G14FLD4/ref=cm_sw_r_cp_apa_glt_fabc_NV8VERZHYMHY5M8CNWJB?_encoding=UTF8&psc=1
