Yes, you will get at least 3 out of 6 that you can't use if you buy a pack. But a pack is $4 so you aren't losing much.
Not sure exactly what gauge would be best for you, and I'm also not sure where you could get a single string cheaper.

Strings are "typically" replaced every 3 months or so. Something like this is super common. If you're not sure on the string size, .009s, .010s... look up your guitar on Sweetwater.com or the manufacturer site and it'll have that info.

I'd recommend buying a string winder from your local guitar store too. And like u/splslick said, I would use those websites. I personally still use https://syngates.com when I practice!

Just use the middle 4 strings, done.
Inverting strings won't interfere with how you play irl, it'll just display the strings in the way that everyone uses for guitar tablature, with the thickest strings on bottom, thinnest strings on top. It's not really that huge of a deal if you don't invert them, you can even see on the RS developer streams that they don't invert. But if you ever want to read tabs it might make it easier.

Those colored strings might be fun but probably not necessary. You'll probably get the string colors down in a few days at most. I find it easy to remember that the three thickest strings are the primary colors, and the two middle strings, the ones everyone has the most trouble with, are opposite colors (blue and orange.) Then it's easy to remember purple as the thinnest string, and you're left with green as the 2nd thinnest.
