It's paper I find is thicker than the other notebooks I have used in the past, so by far my favorite notebook I have used.

I bought a bullet journal on Amazon named Essentials Large Black Dot Matrix Notebook (Diary, Journal). It is basically the same thing as a Moleskine or a Leuchturrm 1917, but for half the price and with much better paper. I recommend it!

I use this one. I actually like it better than the leuchtturm, the paper is thicker and no bleed through (very mild ghosting though). I've even been able to do some veryyy light watercolor on it (watercolor pencils + water). And there's a pocket in the back to store stuff. Its also cheap so if you dont like it, not a huge waste of money. But I love it, I've bought 3 so far which is rare... I almost never repurchase the same notebooks.
Cons: no page numbers, no table of content. The pages are a little bit on the brownish side in color, not true white. For me its a good thing but might not be for you if you prefer completely white pages.
Peter Pauper Press Essentials from Amazon. I use the dot grid one but they also have it with square grid like graph paper.
It’s about CDN$11 with good quality paper and binding. I use fountain pens and the ink doesn’t bleed through. It has a ribbon page marker and a pocket in the back. The only downside is there are no page numbers.
I use this one from Amazon. I got it years ago to try bullet journaling with fine liners but now I use it to journal with my fountain pens. I’ve never had any feathering or bleed through with my pens.

I really like the Essentials line on Amazon -- hardcover, A5 size, good paper for fineliners, subtle pale gray dot-grid, 192 pages, lies flat, inside back pocket, ribbon marker and elastic band closure. Also not too expensive (about CDN$16).
Cons are I would like numbered pages, another ribbon marker in a different colour, and the cover only seems to come in black.

I actually really like the Essentials dotted notebook sold by Amazon. It’s less expensive and not as “popular” but I believe the paper is thicker than the commonly-recommended Leuchtteurm notebook (which has very numerous complaints about that very issue), the size is great for me, and I love the attached ribbon bookmark as well as the elastic band that holds it closed.

I’ll also give a recommendation for pens. When I was in university I always used Triplus Fineliners and I had the 20-pack. My notes were so beautiful 😍and the different colours legitimately helped me organize them better.
If you have a reasonably suitable notebook laying around I'd suggest using that for your first time.

I recently bought the essentials notebook by peter pauper press from amazon, which is hardcover and 100gsm
I'm very happy with it so far. I've heard some complaints about the quality declining recently, one example being that the dots don't line up exactly between the two pages of a spread, but it's such a minor thing that would only be a problem if you make full-spread layouts. I honestly would have never noticed it if not for someone telling me about it in another post, it's like a millimetre off. I haven't had any issues so far in terms of ghosting while using my fountain pen, though I couldn't comment on other materials like markers and paint... lastly would argue it's a really good price (11ish CAD) for the quality, compared to others like moleskine and lechtteurm that are 20-30+. there's also tons of reviews on the amazon page that might help you decide. andddd now I've just realized that you're looking for B5 woops, maybe this brand has a B5 if you look into it.
Try Peter Pauper Press dot grid Essential journals -- they have beautiful thick paper that take my fountain pen ink no problem and most markers unless I really lean into the colouring.

My first bujo was this dotted notebook from muji. Its only $5 (CAD) so I wasnt afraid of messing up or wasting it. The pages are too thin and glossy/smooth in texture (I prefer nonglossy) but because of the low cost it really got me into bullet journaling.
I currently use the Essentials Dot Matrix Notebook (100-gsm, A5) which is actually better in quality than the Leuchtturm but waaay cheaper at $11 (CAD). Leuchtturm has ghosting/bleeding, this one has almost no bleeding/ghosting unless I go reeeeally heavy with the markers and I can even use some watercolor on it. Its missing some features like no index pages or page numbers but that makes it more versatile for me. The pages are more yellow/brown in color, might be a negative if you prefer completely white pages. Has a pocket in the back cover to hold stuff.
It depends on location as well. If you're in the states, I use the Peter Pauper Essentials dot grid.

I have never used this ink, but look into Peter Pauper Press Essentials journals. Less than $15 USD, and I do believe available on amazon as well as their own website. This paper is 80 gsm I think, and holds up really well compared to Moleskine and LT1917.

This one's my favorite, I've been using that brand since I started bullet journaling five years ago. It also comes in square grid.
This dot grid journal is $11 (changes a bit from time to time) and has 100lb paper as opposed to the 1917's 80lb.
