I use a similar product and have had zero issues Velo Hinge. Some wheel/tire combos will require the longer hook. It’s a very clean and simple design. I use a Steady Rack for my fatbike due to tire size, but they’re way more expensive.
I know you’ve already done your own setup, but I figured I’d toss out a pretty cheap means of mounting that also allows bikes to be tilted, further saving room. The Velo Hinge is easy to install, cheap, and relatively small/clean looking. Some wheel/tire combos will require the long hook to fit. It’s also sold by a company that’s local-ish to me.
I use the velo hinge. It's not completely flat but the hinge gives you some flexibility. I have 5 in my garage. Not all my bikes 😁

If you're gonna drill, I can't recommend these guys enough. I use them now, but bought the free standing rack since I just got a set of carbon wheels and figure it's probably not safe to hang the bike by them.
If you're gonna hang multiple bikes, you need to be 2 stud lengths apart from each other so there's room for overlap, and you'll need probably around 40" of wall real estate per bike. I'd def. recommend drilling into studs.

There's a lot of vertical wall mounts, but not many that pivot. This one only pivots in one direction, and getting the wheel in the hook is probably a bit trickier than with SteadyRack, just based on videos.
I'll probably end up getting 4 or 5 of these, whichever I choose, so the $60 price tag hurts.
There are better ones, but this one is like half the price and works fine. Maybe a bit much with the mountain bikes as it flexes, but not too much.

Works on 27 plus 3.8 tires so should work. The swing out of the way functionality is great, saves a bunch of room.
Since converting my mtb to 650b in the front, I've gotta hang it by the rear tire, which is kind of annoying with my back door and the cats' litter box next to these (the handlebars seem to get in the way more), but I'm otherwise happy with my system.
I bought these on Amazon, and I think they make a fatty version (which I'd recommend and may upgrade to!).
I bet you could fit one or two more if you installed some of these.
