I've been using this Fino goose-neck kettle to boil water for my pour-overs and French Press for a little over a year now and I have no complaints. Water maintains heat well when you leave it in the kettle with the lid on so as long as you pour somewhere between off boil and up to a minute and a half off boil you're not going to notice any difference in your coffee's taste.
The Fino has been a great starter kettle for me. Price is a good 45% lower than the Hario and while it's a little smaller (1 liter), it's perfect for individual use.

This is what I've had for a while, and it does the job quite well.
I received this kettle as a gift, but it's served me quite well. It retains temperature quite well, and has withstood probably hundreds of pourovers without any dip in quality whatsoever.
This starter kit for the Hario V60 is probably going to be great for you, it has everything you need, plus it includes what is arguably the best material V60 (plastic retains heat better in the brew, which can help with extraction).
I've used this generic kitchen scale for a while, and it's definitely the one thing I've been thinking about upgrading first. It only measures whole numbers, but I never felt that getting the brew up to the tenth decimal would change the brew that much. I've heard people on this subreddit recommend this scale, which is probably the one that I'll buy in the future as well. What I like is that it also has the timer already in it, which is handy.
I think the total of all three is roughly ~60-70 dollars, which seems like a lot, but can carry you a LONG way. Hope this helped!
EDIT: I didn't see that you liked to make coffee in larger batches; in that case, I'd 100% recommend the 8 cup Chemex. I sometimes make coffee for 3 people, with each cup of coffee being roughly 250 mL. Not sure if 6 cup can make that much.
Well, I'm gonna tell you my experience here. Using a gooseneck is kind of a pain for a french press, if you ask me, because the thinner neck makes it take longer than it should to fill the carafe.

Just getting started becoming a coffee snob here. I have an Aeropress and I guess I prefer bold, bitter-ish coffee over fruity/bright/clean. I want to explore more brewing methods but cost is an issue (poor college student). I was thinking of getting a plastic v60, but my main concern is the goose neck kettle. Why are they so expensive? Do I have to think about much when buying one? The Fino and Buono look about the same to me. Is brand name the only reason for this price difference? I was planning on heating water either stovetop or using a cheapo electric non-goosey kettle.
