This is a pretty inexpensive approach. I've seen people use button makers before, but those are expensive, all this stuff together is like 20$ per 100.
The circular punch seems just as cheap as scissors on amazon so I'd probably do that.
Color printing is what, 10 - 20 cents a page these days, so I imagine less than 1 dollar per 100.
The first thing that caught my eye was some of the straight edges on the cuts. It looks like your images aren't large enough to utilize the entire usable space in the capsule and the things behind it are showing around the edges, so I would also enlarge them. I would recommend using something like a cricut or silhouette cutting machine, or a punch like this to get the cuts looking perfect and use up the entire area.

Okay, two more questions:
1) Did you try or consider a 1" punch like this Fiskars? LINKAnd if so why didnt you go/like that route?
2) Running the numbers real quick, per quantity 100 it looks like going the coin NFC route is about 4 cents cheaper per unit than doing the sticker NFC with the poker chip. Is there a reason you didnt use the coin NFCs instead?
Nice! I always felt like minis were great for players, but take up too much storage space for enemies. I like the suggestions others have made around printing onto labels and such.
You may want to look into getting a 1" hole punch as well.
I bought a bulk pack of junk Magic The Gathering cards and can convert one of them to a monster token pretty fast. It is also handy when I have a surprise and want to drop 10 tokens I wasn't prepared for.
I use this one from Fiskars, which let's you see exactly where you're punching.

I love it. You can get a one-inch hole punch to speed up the process of cutting them out, and then use the one-inch foam furniture pads that are peel and stick. It makes the construction part 1000x easier.
One suggestion, I personally like the scissor style hole punch because you can actually see what you're cutting out. They're a bit more expensive, but you make less errors. And a caveat to this type of punch... I ended up going with a thicker paper because the bog-standard printer paper would tear when using this punch.

Also, as a bonus, the hole punches come in larger sizes and even things like hexagons, which we know are the bestagons. I went with a 1.5 circle for large creatures instead of the 2 inch circle. But mainly only because that's what fit into my storage containers.
