RV water pumps come with a built-in pressure switch that shuts the pump off after re-pressurizing the water lines. 12 volt makes em easy to run on solar and batteries.
Buy an RV/boat water pump and you will be good to go where the pump/pressure switch is concerned.

It will really depend on your rig / how you want it set up. The two biggest expenses were the Pump and the Heat Exchanger all the hoses and fitting will just depend on how you want to set it up. I was under $200. All the 'complete kits' you find online were in the $3-400 range and use lower quality parts :)
Finally! One last trip to HomeDepot and everything seems to be finalized. My apologizes for the vertical video. I had my hands full.
First impression, I was expecting the water to be a lot warmer. On the first pass it raised the temp 30 degrees from ambient. I was using cold hose water for reference. My solution, is to run the system 'open' with the water going back into jerry can so it can 'cycle' up to the desired temp.
I let it run for 4-5 min, so the water went through the heat exchanger twice. Perfection. At that point, I can kill the engine and shower normally. (less idle time is an added bonus)
This allows me to avoid water sitting in the heat exchanger for too long and become scalding hot (only takes 15-20 sec) The anti scalding valves are very expensive and add more plumbing. KISS.
The Flo Jet Pump works perfectly and provides more than enough PSI to quickly get soap out of long hair.
I would not have done anything differently at this point. I will upload a picture of the heat exchanger and plumbing in a bit... The Colts are giving me heart palpitations.
