I will say the wide mouth works better than the other for me.
Do you know where to buy JUST the jar sealers without the tube? Now that I've got the inkbird sealer (thanks for posting!) I'd like to be able to seal jars. I found e.g. this but it includes the tube, which I would not need.
There's two sizes of mason jar, regular and wide mouth. I picked wide so I didn't have to buy two of everything.
Fill the jar, put the flat lid on, pump out the air, put on the rlid ring.
There's lots of adapters for different vacuum systems.

get a vac sealer attachment for mason jars... it works great w/my foodsaver and seals up jars completely.
Hey sorry just saw this. I did find an attachment that I think would work, but I have not tried it with any bags, just jars. It plugs into the hose attachment on the nesco and worked great for the jars, if the the bags have a port for the hose I would think it would work fine there, too.
Since you are not planning on opening the jars very often you might consider using a vacuum pump to seal the jars. The FoodSaver jar attachment enables you to seal lids onto jars for long term storage of dry goods. It's available in wide mouthed or regular size. You can also vacuum seal canning jars, Weck, bail wire top and sometimes reused commercial jars by putting them inside a larger vacuum container and pumping the air out. The lids need to be just slightly tight but not too tight so that the vacuum pump can draw the air out of the jar. When you release the vacuum in the large outer container the lid of the inner jar should pull down tight.
will a vacuum seal work ? something like this to avoid a water bath ?
I have the jar sealers and find that mason jars store almost everything beautifully. https://www.amazon.de/FoodSaver-FCARWJAH-000-Wide-Mouth-Regular-Accessory/dp/B016OL1AB6/ref=sr_1_24?__mk_de_DE=%C3%85M%C3%85%C5%BD%C3%95%C3%91&dchild=1&keywords=Vacuum+jar+sealer&qid=1609520489&s=kitchen&sr=1-24
You can get this adapter on Amazon which connects to a vacuum sealer, and seals Mason jars with the metal lids.
You can reuse lids over and over. You are not canning, just vacuum sealing.
If you already have a vacuum sealer than you can use one of these to pull all the air out of a jar. That will keep oxidation from happening and also will keep the bud from being crushed in a traditional vacuum seal bag.
We are talking about changing the inner atmosphere though...
Devices like this are used.
FYI there's a mason jar attachment for a vacuum sealer that you can use to keep them even more fresh link
You can use mason jars that are freezer safe and use the FoodSaver Vacuum Sealer Wide-Mouth Jar Kit found on Amazon do that you minimize plastic and also for certain foods you don’t crush it.
I have a foodsaver and this:
I use this with a foodsaver.
These work with the standard wax seal lids. But since you aren't using heat, the seals on the lid can be reused.
I use mason jars and the [vacuum sealer attachment](https://www.amazon.com/FoodSaver-FCARWJAH-000-Wide-Mouth-Regular-Accessory/dp/B016OL1AB6/ref=sr_1_4?crid=751YZCD2OWP1&keywords=mason+jar+vacuum+sealer&qid=1668612735&sprefix=mason+jar+vacuum+sealer%2Caps%2C144&sr=8-4). Way more convenient to pop the seal, snag the amount of hops I need, then seal it back up.
oh it's surprisingly easy, you can use a dehydrator with silicon trays.
heres a video which covers it.

Along with this, the vacuum sealing can be done pretty easy too with a vacuum sealer kit like this if you're storing in mason jars.
https://www.amazon.com/FoodSaver-FCARWJAH-000-Wide-Mouth-Regular-Accessory/dp/B016OL1AB6/ref=sr_1_3?crid=29Y8XCWK18OHI&keywords=mason+jar+vacuum+sealer&qid=1651295094&sprefix=mason+jar+vacuum+seale%2Caps%2C201&sr=8-3
and as far as pumps go for vacuum sealing, there's electric ones you can use, but many people like me like simply using a brake bleeder like this.
As always, the internet is a wealth of information. if you wanted to keep it simple, you could preserve eggs like the old days with hydrated lime from the hardware store too. 1 oz of hydrated lime to 1 quart of water and simply place the eggs in the mix in a sealed container, some people state their eggs have been good for up to to years stored this way.

One thing to consider would be buying a vacuum sealing kit for mason jars (if you have a vacuum sealer). If you really want to go all out, purchase some silica gel packets and oxygen absorbing packets. These should all help extend the shelf life of your jerky. But unless you're using a curing powder with your jerky, you're still going to end up with a somewhat limited shelf life (at least compared to store-bought stuff) just due to the nature of jerky (meat that still has some moisture).
Away from heat and steam is better. Mine are by the stove but the kitchen is so small that everything is by the stove. I like the pullout pantry drawers with mason jars Kenji Lopez-Alt uses. It’s pictured around the 1:44 mark of this video
If you have a vacuum sealer you can seal all the spice jars to keep them fresh longer with this attachment
Check this out when you get a chance. While food saver bags seem like they'd be ideal, it turns out they're actually permeable.
This is what I use to vacuum seal the mason jars with a food saver; I love the pop I get every time I open a jar, and on the few occasions I've gifted jars, people have been pretty enthralled with the packaging.
If you have a FoodSaver with an accessory port, you can buy this mason jar vacuum sealer attachment and store the tea in vacuum sealed mason jars.
I prefer regular iodized salt, whatever goes on sale (occasionally) usually the Morton's I think? Has a girl in a raincoat on it. I don't store my salt in buckets. I decided compromising that quantity for usage was a no go for me. I use 1/2 gallon mason jars and I vacuum seal them and it has worked awesome. I initially tried bags but that makes the salt into bricks IF you can get a good seal. 5 gallons of salt gets exposed all at once and starts picking up humidity. 10 half gallon jars is the same amount but doesn't.
