If you're inclined (and you have fridge space) it isn't hard to make naturally fermented sour pickles which are IMHO far superior to vinegar pickles.
Here are some bread and butter canned pickles which are far less sweet than store bought.

I too am new, but I found ATK's Fullproof Preserving book, the recipes are small which makes them great for discovering something new.
