Jerky doesn't have a great shelf life unless you vacuum seal and freeze it.
It's far more shelf stable than raw or cooked meat, but it's not something that will last more than a year without spoiling.
If you want long-term shelf-stable meat, look for bulk freeze dried meat like this:

And that's just as expensive, or more expensive, than beef jerky by weight.
Freeze-dried beef, if you are lazy like me. Stove is nice but not necessary.

Whatever fat you use when not backpacking: butter, lard, beef tallow, lamb tallow.
