It seems like every other time I hold down x or y I get an immediate double jump. I opened my controller to look for gummy stuff and the buttons are clean. Is this a known issue? It makes floating near the stage as Peach impossible to do consistenstly.
For more context I'm on PC, using a gamecube controller, this adapter, which I know isn't recommended, and this happens on unclepunch and slippi.
I've used all manner of adapters at tournies, and I can't tell the difference. My own is a Kelux adapter, came in a generic purple box, and it's perfect. Better looking than Mayflash, at least. Cheaper too.

I just want to come back and point out that I'm currently using an unofficial adapter and it works perfectly.
You need a Mayflash (or similar) adapter to connect it to your PC via USB.

Alternatively to the phone, if you have a laptop or better with an HDMI port, you can play it on your TV with your preferred controller like Pokemon Stadium used to let us play our GBA games on the TV through the use of emulators like VirtualBoy Advance-m or Retroarch (which uses multiple emulators so you can play other old games too). I've been playing old retro games on my 4K TV with an older PC from about 5-6 years ago using a mix of a Gamecube controller for Nintendo games (that I had to get a cheap adapter for) and my PS4 controller that I have hooked up with Bluetooth using a cheap adapter for that.
I bought a Gamecube controller adapter off Amazon (link) and have it connected in "PC" mode. It registers as 4 GameCube Controller Adapter (regardless of controllers being plugged in) and it seems to work as input. The four logical controllers show up under Big Picture > Settings > Controller Settings, but in Steam, it doesn't appear to behave the same way as, say, my Wii U Pro controller. When I click the Wii U Pro controller, it shows options for preferences, identify, calibrate, and layout. However, when I click one of the GC controllers, it immediately takes me to layout, and although I can change the button assignments, the only options are "cancel" and "clear and exit". Backing out of this screen resets the button assignments, and the controller does not seem usable in my games under Manage Game > Controller Configuration (when the Wii U Pro controller is not connected, it says no controller is connected, even though the GC controllers are showing in global settings).
How can I make the GC controller usable?

I'm using an off-brand one from KELUX. It was cheap as hell (less than $10 iirc). Got it around the time Nintendo ones were $60+

This adapter is actually really good quality and it's only $30. I ordered one a few weeks ago and it works fine.
I bought this kelux brand adapter from amazon for $35 and it is identical to this product. I received it yesterday and it has no branding on the outside of the adapter but I also haven't had a chance to test it out in game yet.
