A link to the Amazon page for God is red, which I see mention one book by Philip Jenkins actually. The one they mention specifically is The Lost History of Christianity: The Thousand-Year Golden Age of the Church in the Middle East, Africa, and Asia-and How It Died. And wow is that long. The title is a bit sensational, but it is about how Christianity spread both west and east, even if the later often isn't talked about as much. And the Christians in Asia weren't some small groups either, they were numerous and dynamic and Christians centuries before parts of Europe was.
The second book I want to mention is The Next Christendom: The Coming of Global Christianity. If the other book by Philip Jenkins is about how Christianity wasn't just a European religion historically, then this book is about how it isn't one now either and won't be in the future. So it isn't about China per se, but about Christianity in places such as Africa, South America and Asia.
Philip Jenkins also have several long lectures on youtube, it might be worth checking them out before deciding if you want to read the book. This is the first part about a lecture about The Next Christendom and this one is about the The Lost History of Christianity.
Edit: Clarified a few things.
