Only the bottom-most rack is attached, the rest you can use or not use depending on how much space you need in-between each rack.

Cool! Is the dehydrator rack like this one? And for the 36 hour fermentation - did you use the "yogurt" setting? Did you put any water in the instant pot?

It's the one appliance we use almost everyday - the air fryer lid! Less electricity then heating up my oven and we can cook things so much faster. Plus - we can take it camping!!
