It comes in a spray bottle too, but I prefer to just pour a bit on a microfiber cloth or paper towel.

It's not so bad. I've also lived in non-traditional living spaces. I just think you need to delineate spaces for certain activities and clean a little.

Put your coffee maker, microwave, and rice cooker in a line starting in the corner by the fridge. That's your cooking corner, and it will create more space.
Get a 2 tier dish dryer. I also don't have a dishwasher, and I just use a drying pad. However, I don't do dishes for two.
I don't see a problem with the metal shelving, if you are working within a budget. I would just get some baskets to store everything in. The only reason it looks messy is because you can see everything.
