You have def seen this on both the burger show and possibly his individual show as well.
I find that the opposite is true. I rarely order burgers in restaurants, because I know that I could do a better job.
I don't do anything to the meat during prep. No seasoning, NO SALT, no bread crumbs, no onions or anything else. I just have a bowl of ground beef, and a salad scoop.
Scoop a ball of ground beef into a hot skillet, and press it with a spatula until it is a patty shape. Now I season the top with kosher salt. Once it is mostly cooked through, flip it. The cooked side should be nice and brown. Drape a slice of cheese over the cooked side.
Once the patty is cooked through, serve it. It will probably be the best burger you've ever had.
I highly recommend buying this book. I bought a copy myself after I saw the author on the Burger Show.
