I'd recommend this book. I got it from a piano store last year, and it's got some really fun (and relatively simple or minimalistic) stuff in it, in addition to some really challenging pieces from various genres. I really like Rachel Portman's themes (Chocolat and the Cider House Rules), Alan Silvestri's Forrest Gump theme isn't too bad, and Dario Marianelli's stuff for Pride and Prejudice is also really relaxing. It's also got "The Heart Asks Pleasure First" from The Piano in it.
