I've started using sesame Ezekiel bread, which is allegedly super healthy (sprouted grains and such, have to keep in freezer since it expires quickly). It tastes really good toasted. Add a fried egg (with salt and pepper) and a slice of cheese.
Also, I just bought a mini non stick frying pan that makes cooking a single egg so much easier. Recommend if you don't have something similar!
You can do them in a 9x13" pan & then slice them, although lately I've been doing them in my Souper Cubes:

You can mix in egg, cheese, milk or cream, various meats (I typically use ham cubes), etc. I usually just do 3 eggs & ham chunks - 182F 100SVM 20M. Let cool & stick them between parchment sheets in a Ziploc bag & store in the fridge! I add seasonings when I build the sandwich so that the egg loaf looks nicer.

It's sort of ruined all other breakfast sandwiches for me lol. Kind of like when you have your first properly-seared, sous-vide steak...going out to eat to get steak at a fancy restaurant just becomes an exercise in criticism & wasted money haha.
Yes, I use two pans. If you use larger bread (ex. farmloaves, wide multi-grain, homemade loaves, etc.), this 5" square pan is pretty good for twelve bucks:
If you use regular store-bought loaf bread (like Wonderbread), then the smaller 4" pan mold fits better & also lets you cook more: (can do 4x patties at a time & then chill in the fridge or freeze)
