In Moab, if the trail name sounds gnarly...it probably is. ie Metal Masher, Rusty Nail, Steel Bender, Hell’s Revenge...etc.
UTVs are pretty versatile depending on which ones you have but for the beginner off-road people in your group just be careful as you can get into a spicy situation really quick.
Know which trails you are doing each day, plan it out well in advance, and share your itinerary. Charles Wells books are great for this and he has a Moab Edition . I love reading up on trails and planning out each day with these books. They’re Super well done and great to bring along while you’re out there as they have GPS coordinates, waypoints, and write ups.
For an extra security blanket OnX Off-road is a great app to use while you’re out there as you can download maps offline and your phone will still ping your exact location on the map. Also shows public vs private lands
Must do? Depends on your rig and experience. First I'd do Fins and Things. Then 7 mile Rim and explore that area. Long Canyon is easy and pretty cool. Once on top head over to the 3D trail accessing it off of Barlett Wash. Hells Revenge is OK IMO, but most people do the tip toe route and exit the way they came in.

Most places you won’t have service for any phone apps. Bring a nice camera if you have one. DO NOT TRAIL ALONE. Especially in Moab, it’s the high desert.
WATER. Water. And more water. Again, the elevation is high there and the temps get up there. Sure it’s a dry heat, but you will get dehydrated fast. My wife and I went through a 40 pack of water in 2 days. Have some snacks packed away too.

Bring some tools in case something breaks. My CV joint blew on Black Bear Pass in Telluride and thankfully the group I was with had the tools to replace it.

Since it's federal and state land they all have different restrictions on camping, some trails require permits, etc. It's best to do some research before you go.
No affiliation, but went off a lot of the green trails in this book with a grand cherokee and it was helpful to understand what we were getting ourselves into, as well as find new trails.

First time try driving some mellow trails to get the feel of things. Dome Plateau is a good one, Long Canyon, then to Secret Spire.. The drive down Bartlett wash is fun and easy, you can turn off into Hidden canyon for a nice drive.
Moab Vet here. 3D trail, but enter from Bartlett Wash. The first part of the Safari route is just boring.
7 Mile Rim, I also begin a bit different than the Safari route and come up the Buttes and Towers start then turn onto 7 Mile.

there are also a few river over looks and I can't remember the names. Purchase the book Moab Offroad Trails, Charles Wells.
traildamage.com has all the trails in/around/near Moab (as well as the rest of Utah). Hand's down your best resource. Everything is rated as well as gpx files for all the various trails.
A quick google search will bring up these. Worthwhile investment. It's basically a paper version of trail damage.com just without the gpx files - good for on-the-fly research and reroutes.
Also check out Latitude 40 Maps for their Moab West and Moab East.
And, of course, don't forget about the Utah Backcountry Discovery Route. Although setup for dual sport motorcycle riders (please respect them and their route) the whole route is on public two-track. Nothing a properly equipped rig can't handle. Just know that what's "expert" on a bike it isn't always "expert" in 4x4 and visa-versa. That said, Lockhart Basis (Section 2-alt) is no joke from what I've heard.
