I use the Hagabis USB-C hub which also contains two SSD drive.
Hagibis USB-C Hub with Dual Hard Drive Enclosure, Type-C Docking Station for Mac Mini M1 with 2.5inch SATA, M.2 NVMe NGFF, 4K@60Hz DP1.4, USB 3.1 Gen2, 10Gbps USB-C, SD/Micro SD (MC25 Pro DP) https://www.amazon.ca/dp/B096LMGTNG/ref=cm_sw_r_cp_api_glt_i_Y3SS05V1NP9WTVCEMZ7T?_encoding=UTF8&psc=1
I have this dock station for my m1 Mini, works great! I have the DisplayPort model, only because it doubles as a 2.5in SATA and M.2 NVMe enclosure. Upfront it has only USB3 and USB-C port (as well as some card readers)

If you don't mind me asking, which dock do you use? I was looking at getting the Hagibis USC-C Hub

Seems to have everything I'd need and it's compact, which would look good on a desk.

Model below is better than yours. But it is still not perfect

But it still not perfect
I don't have the OWC hub. I have the Hagibis:

Overall, I am very happy. I need it less now that I have my Studio, more when I had my Mini. I bought it for the ports and the HD enclosures were an added value, but not that I have a Studio that has a reasonable amount ports, I really just use it for the enclosures now.
SSD Speeds are pretty good (400/400) and NVME speeds are excellent (850/850). First NVME drive I had in there seemed to burn itself out quickly (within 2 weeks) but the one I have in there now has been pretty stable (one day I noticed it was unmounted with no ejection notice, but I remounted and haven't had an issue since).

this one never disconnets for me
I have the same setup atm, only 256GB internal storage and 16GB RAM.
I bought external drives and tested all of them, the normal 1TB SATA SSD has a 300/300MB transfer rate in the enclosure the NVME external enclosure makes a 600/600MB rate

while the internal Apple drive does 2400/2400MB
I think for most application even the 300/300MB sec is more the enough
