Can't find one with 3.5". You might be better off with a hub that meets all your requirements, including a hub that has a USB-C data port. And getting a small enclosure for the type of HD you want. You'll have to be careful about how much power the 3.5" drive needs, and make sure the hub can supply that through its data port.
SATA 2.5" :
M.2 SATA:
M.2 NvME
You sound very educated on this matter.
Is it safe to say most 2.5 inch ssd will provide 500Mb/s for read/write The smaller more mobile ones gen1 are same speed, gen 2 will be double the read/write speed. Using USB C or USB 3.1.
Then when U get to NVMe drives, the speeds possible triple but then U have to concentrate on your connectors bottlenecking you. Best solution is using enclosure with thunderbolt connector and cable.
Guessing that would take advantage of the thunderbolt handoff on the Mac mini but I am reading that the M1 might still limit you to the 1G read / write speed…. So hard to test…
I also want to use the external drive with my iPad Pro 2018 which is just USB C and not thunderbolt so I guess getting anything over 1G read/write would be a waste of money at this time..??
Any additional support or feedback is appreciated.
I picked up this hub with ssd storage which is usb c connector. Figured would leave this connected to Mac mini all the time, as long as these drives are good and I should t expect more than 500Mb/s with 2.5 inch drives connected with usb c. If I’m mistaken then maybe I need to find better drives.

I would probably pickup one of the mobile ssds as well but wanted to see if my iPad Pro 2018 would get the 1G read/write or just waisting my money on that higher end and maybe just pick up version 1 option that is out there with only 500r/w
