"steam" is the temperature of the hot air between the liquid and the lid. this was measured through the temperature probe hole in the lid (i.e. lid was not removed for this). however, the lid was removed to measure the water temperature (the probe wasn't long enough to reach otherwise).
I need to run more tests using different size bowls and differing amounts of water, but so far my results show that high is hotter.
Like this? I had this model for years and just recently replaced it. It came with 3 different sized pots that fit into the base.
