I've had pretty much the exact issue with one of my cats disassembling water fountains (we tried 4 different fountains...) - except he'd also try to kill himself by chewing all the wires...
I got a self filling water bowl from Torus. It's got a thick rim where the water is stored. At first I got the 1 litre one and he loved drinking from it (and using it as a pillow...). But he can still move it around a bit. I got the 2 litre one now and it's too heavy for the little (lovable) bastard to move. Also no wires - the water fountain is only used when they're supervised now.
It's not running water, but it's still better than no water or water everywhere.
