I wear them all the time for skiing. Pro tip, put them on top of your toes instead of on the bottom, so you won't even feel them there. On the socks, not skin.
With this you can wear thinner socks if you want, for better control. At least, that's how it works with you boots, as they already have some foam for insulation. Not sure about hockey skates.
I'm entering year 5 of commuting, I've stopped riding in either snow or ice, so no more studded tires. BUT it still gets chilly. I'll ride down to 20F and I believe I have it finally dialed in.

But for Xmas this year, I treated myself to a Castelli Alpha ROS which is stupid expensive. BUT It's the nicest piece of clothing I've ever owned, I can ride in 20F with only a jersey and be comfortable!! If I had it to do over, I'd get a good jacket from Gore Wear. I've been so impressed with the gloves I bought from them that I'd trust the jackets to be just as bad ass and half a cheap (or less) than what I spent at Castelli.
I hope all this helps. You don't need expensive stuff, the other two dudes don't spend any money on cold weather bike gear, they are just tough mf's and grin and bare it. For me, the mental and physical benefits of riding when I can in our short season mean it's worth it for me.
