I think that you have thought through this well.
Since you aren't going to be in the house, much of the stress will go away.
The big problem that you are going to run into is the tyranny of choice.
You say "we", which implies that there is another adult human involved. How much are they willing to be involved with the process? How aligned are your tastes with that person? Are you *really* willing to let somebody else - whether it be that person or it be a designer - make choices that might not be the ones you would make?

My wife and I had somebody renovate our upstairs while we live in the basement with our 4-year-old. That was certainly stressful. And then we've redone the rest of the house ourselves. We luckily are both easygoing and we have compatible stylistic ideas, so we don't get into conflict on those sorts of things.
