/u/solipsistnation did a build of a model tank that did it more or less step by step that might give you a better idea. Alternatively, pick up a magazine like Fine Scale Modeler at a Barnes and Noble and they often have "start to finish" builds you can look at to get an idea. Look on his "submitted" threads list. (Or he can tell you).
Here is a build review of the kit you're interested in. Try googling "build log" (and Enterprise E) on google and you might find a thread on a forum someplace where someone describes their build and lighting process step by step.

Honestly, this is not a good choice for a first kit. Do what you want, but I'd start with something simpler. Round2 also makes some simpler, snap together model kits in 1/1000 scale of the Enterprise NX-01, Enterprise 1701 and 1701A/Refit. If it were me, I'd pick up one of those, snap and then GLUE it together, then concentrate on doing a good paint job. Then, I'd move my way up to the Enterprise E.
Some companies might offer a lighting kit to go with the Enterprise E, but I haven't checked in years. It can be done, but often it's a lot of drilling out windows, etc.
Also good is the "Cadet" scale Enterprise A, B, C, D, E.

It's beautifully molded. I have the original version from 1998/99, and it snaps together. I'd use it to paint practice.
Also, round 2 also did a tutorial on lighting their very basic kit, a K7 space station. It's things you can do to work your way up.
