Put the intake close to your stove (or mount it somewhere above) and route the duct to your closest window. You can put it away when you're not using it. You can also omit the carbon filter because you're probably not too concerned about the exhaust smell.
Note that a standard overhead range hood clocks in at about 100CFM, higher-end ranges (at the 36"+ size) use 300CFM+ fans, and those Jenn-Air downdraft fans are 600CFM+. Choose a fan with a flow rate that fits your needs.
