Hydroponic Food Production 7^th Edition by Howard Resh
This is my go-to reccomendation, if you want to go beyond what's taught here, simply study chemistry and or biology
This is a great task to undertake! I've been working on a home food production solution using automated aeroponics for years, and I've constantly struggled with the lack of consolidated information out there. My experience is particularly with aeroponics but I'd love to help out if I can and can find the time! Feel free to DM me if you ever have any questions, I've invented a fridge-sized 68 spot unit that can grow root vegetables and am fabricating beta test units this year. For me personally, the problem of agriculture is its scale, and that we need to perform nutritionally sufficient farming in the home, at the point of consumption, using smart tech so people can be farmers without changing their lives.
Regarding lighting for all these alternative growing methods, I've found Bruce Bugbee from Apogee Instruments to be a treasure trove of information for horticultural lighting, he's got tons of youtube vids. Other than that there are a myriad of small to medium sized youtube vids going through these methods, and there's a few book on hydroponic growing as well like Hydroponic Food Production https://www.amazon.com/Hydroponic-Food-Production-Definitive-Commercial/dp/093123199X/ref=sr_1_26?s=books&ie=UTF8&qid=1390587795&sr=1-26&keywords=hydroponics and Soiless Culture https://www.amazon.com/Soilless-Culture-Theory-Practice-ebook/dp/B001BRSRZQ/ref=sr\_1\_118?s=books&ie=UTF8&qid=1390587949&sr=1-118&keywords=hydroponics
