The instruction in the recipes are concise, and most of the recipes are un-illustrated, so it isn't very beginner friendly. But if you know the basics of Indian cooking, it's an excellent, large, diverse collection of traditional recipes, including some from tribal India you won't find in typical cookbooks.
Je ne l'ai pas personnellement mais j'ai déjà eu l'occasion de feuilleter ce bouquin qui est un bon gros pavé en anglais avec 1000 vraies recettes authentiques. Par contre, beaucoup ne sont pas illustrées. Je pense que ça coche la première et la troisième case. Pour la deuxième, je me souviens qu'il y a des grandes catégories, et je suppose qu'il y a un index (genre pour trouver les recette de chou), mais je ne peux pas garantir.
Edit : ha pardon j'ai lu trop vite et zappé le critière végétarien, celui là ne l'est pas (mais en contient beaucoup).
Also, Indian cuisine largely consists of lacto-vegetarian fare.
Pushpent Pant’s India: The Cookbook is a classic, with mostly vegetarian recipes. You can also visit Veg Recipes of India, which has thousands of authentic vegetarian recipes.
I like Pushpesh Pant, <em>India: The Cookbook</em>. However, it isn't a beginner's cookbook, and might be hard to get into if you haven't cooked Indian food before.
For a great beginner's cookbook: Monisha Bharadwaj, <em>The Indian Cooking Course</em>.
Not as comprehensive as the first one above, and not as beginner friendly as the second, but a nice cookbook with some very good recipes: Priya Wickramasinghe, <em>Food of India</em>.
The above is about Kakori but I was suggesting was about Galouti ( Galawti - which literally means "melt" in the mouth) which featured in Raja, Rasoi Aur Anya Kahaniyaan

The book itself is an art, saw it last week - simply amazing
