I build the fire on one side of the grill, stacked up charcoal and two chunks of smoking wood, I use cherry, and I light a couple of briquettes and place the wood on top so it starts smoking immediately. The steaks only take an hour or so to hit temp, 120f, so I want to get as much smoke as possible. I also put my steaks on a cold grill. I start the steaks at the same time I start the grill so they come up slowly together. you can let your steaks sit out and come to room temp if you want, these were fresh from the refrigerator when they went on, I season at the grill and use this Thermometer I smoke up to 250f. When the steaks are close I heated the cast iron inside on the stove to give it a head start and then heated it the rest of the way on the grill. Oil in the pan, Pat the steaks dry and sear 2-3 mins a side alternating every minute.

I like it a lot. It can read up to 4 probes and it has bluetooth, so it allows me to step away from the pit and still keep an eye on temps. It doesn't use a lot of battery on long cooks. The only gripe I have with it is with the app you use and it's really minimal. The app shows you a graphs of each probe temperature, but it doesn't save the graph and it doesn't continuously record.
For my needs though, it's pretty simple and effective to use.
Yep, definitely an electronic temp gauge, I have this one. It has bluetooth, so it connects to my phone. Makes smoking life a little easier. I would also say loves to handle hot food and gloves to handle any hot equipment.

The thermometer at the back of the barrel is a little warmer than the traeger thermometer on the left hand side. But maybe by 20-30 degrees. Mind you my model is old so maybe the traeger probe needs replacing. I am using the Inkbird Bluetooth Thermometer. Works great I would suggest it.

I highly recommend a 4-probe Thermometer. One probe for your grate temperature, three probes for your proteins. Comes in handy when cooking chicken breast/thighs.
I'm using this cheap Inkbird, I hate that it is Bluetooth only so your phone has to be in range, and the graphs of the temperature only register when the app is running. For the price, it gets the job done well.
Getting temp probes for your oven is a game changer for this. Also has clips so you can set one up as ambient oven temp and dial that oven temp in PERFECT.
This is the one I use that I have had great results in. It comes in a 2 or 4 probe version. The Bluetooth range is rather long so I can monitor temps on my phone while in the house.
So, my first ever pork shoulder didn't tenderize. It still tasted good and we ate it, but it wasn't up to my (unhealthily high) standard. This time I decided to try another pork butt with my brand new Inkbird Bluetooth thermometer for a test run. This time it came out perfect!
Trimmed and scored fat cap. Coated the pork with Dijon mustard and a good Kansas City sweet rub. Cooked overnight in my offset smoker at 250 to 200 F for 12 hours. No cheat, as I was asleep for most of the cook.
Came out fall-apart-tender and very juicy. Bone pulled out with zero resistance. Nice bark.

The air probe will generally have a little attachment that allows you to slide it into the grate. For one, I’ve moved to cooking pretty much everything on the top grate so it is farther away from the fire pot at the bottom of the grill. I use the grill grate closest to fire pot to place a tin full of water to keep moisture content high inside of the grill, and to cook items that are less sensitive to heat (e.g. sausages as a mid-cook snack). As far as probe placement, I try to place it as close to the actual meat without touching it because I want to know what the actual temp is at the grate where the meat is located. I’ve used this thermometer for the past year but will probably upgrade to one of the Thermoworks (Signals or Smoke X4) this summer.
The big thing I learned was that just because I set my heat gun to X temp, doesn't mean it's going to instantly put out X temp or that the temperature of air hitting the beans will be X.
It's important to pay attention to how quickly the temp is rising, to get an idea how many degrees the temp is rising per minute.
So, I do think a thermometer is relatively important, at least in the beginning... And probably important in terms of reproducibility.
The graphs are from the thermometer app. It's Bluetooth thermometer that connects with your phone (to keep an eye on grill temp remotely). The app gives me the graph live during the roast, which is pretty cool but not as good as the artisan program everyone talks about.
It's pretty good middle of the road thermometer that I've been using to BBQ for a couple years. It's nice that it comes with 4 probes.

My opinion is that the SNS Grill has a number of improvements (shelves, SNS, temp probe port, hinged lid) that virtually everyone wishes the Weber kettle has, and eventually adds over time themselves or just lives with the frustration. I hate modding things as well, so I just recommend the SNS over the Weber so I do not have to do any mods.
Also, if you do not have one already, you should really get a leave-in temp monitor. It is the single best thing you can do to improve your BBQ. This is the one I have, as I like using the app. However, if you are not an app person, you can look at the Mavericks.

I don't have an iGrill, but if they're like most other probes, that's the max the probe is capable of reading. There are very few of these probe systems that can go higher than that. Look at this one from Inkbird it talks about the max temp being 572 and displaying that if the probe is not connected. That's just how they chose to program it when no probe is connected. Go swap probe 2 to 3 or 4 I bet it'll be fine.
