When you have a small space, it is never a poor decision to have your all of the furniture up against the wall. It would be really impractical to have any furniture in the middle of the room as you will need to use the room for many purposes and be easily able to do so. Having your furniture against the wall will help.
I think you have found the best layout for everything that you need. You talk about doing a bar cart for the kitchen. I don't think I would have one, because it will take up space at all times and might become a stand in the way.
For this reason I would also not do a coffee table. While you can certainly find models that can flip up their lids, so you can eat at them, having one in front of your couch and bed will likely impede your access to both. Instead I would put a narrow but long (length of the side of the couch) table in between the couch and bed, to use as night stand and to put your glass and plate on. Or something like this for flexibility and saving space.
If you would like to have a dining table, I would get one that folds up against the wall/pillar, such as this. I would either put it against the pillar to fold out in the middle section of the kitchen. You could als have it on the right wall, right as you enter the kitchen. If you put it on the wall, you will have more options for different kinds of folding tables. Get some folding chairs as well.
