He focuses on his shio which he is known for. Really good read with hard ingredients to source if you want to make it by the book.
I used Ivan Orkin's recipes from his cookbook, making some modifications - I simplified the dashi recipe to just rely on konbu and bonito, based on a recipe I got from a chef while in Tokyo. I also changed the noodle recipe, using buckwheat and bread flour instead of the prescribed flours. This was quite an undertaking; I think in the future I may try to use a less time-intensive shio tare recipe as well!
I haven't read that one personally, but I really enjoyed Ivan Orkin's book Ivan Ramen. It covers his life, love of ramen, and very specific recipes on how he makes his ramen. Fantastic read.
Ivan Ramen is a good place to start. Japanese Soul Cooking has some good recipes as well.

Check out Ivan Orkin, Michelin Starred ramen chef from Long Island, NY with ramen shops in Tokyo and Manhattan. I've had his food and it's unique, unctuous, and delicious. He's published many recipes that are a little more accessible and less-traditional (though no less delicious) than others' may be.
