OK sounds like seborrheic dermatitis. Diet isn't going to cure it. Medication will. The good news is there a long list to choose from. If one doesn't work then another one might.
All of these things can dry your hair out a lot. So you may want to try a leave in conditioner or a detangler. Kids' detangler works for me.
I have had this feeling too. Do you also have dandruff? I’m not sure how related they are, but I’ve been using an over the counter dandruff shampoo and the pain has stopped since using it.
Best thing is medicated shampoo. There is quite a choice, but I think the sulfur ones work best:
Jason anti dandruff shampoo, it contains sulfur and salicylic acid. Should be easy to find and it's on Amazon as well. Just read the reviews, people seem to like it. Note that Jason has a couple of products, this is the one you want.
Nizoral, either OTC or Rx strength, it is an antifungal.
Neutrogena T-Sal, active ingredient is salicylic acid
Neutrogena T-Gel, active ingredient is coal tar. Has a smoky smell to it. Tends to condition the hair as well.
Selsun blue
You can build up a tolerance to a particular type of shampoo. I would stick with one type for a while and see how it goes.
Jason’s is anti drandruff and is CG friendly. When I stopped using Head and shoulders (even just on my roots not even the rest of my hair) I saw a huge improvement to the health of my curls. It’s $10 on Amazon.

Dandruff is often due to a fungal infection. Like any other infection it can become resistant to a particular treatment. It may also not be regular dandruff, it may be seborrheic dermatitis which is tough to fix. If something doesn't work try something with a different active ingredient.

Not AB but my go to anti-dandruff and scalp healer hair product is a shampoo from Jason. I've been using this one or twice a week since 2010. 7 Years and it's the only product that calms my scalp. However, if you're not into herbal/medicinal smell, then you won't like this. This smells like tea tree with mint and a slight hint of sulfur and can stick to the hair for a a few hours so I use it only at night.
Ah. I had some issues with it on my scalp as well, and this shampoo really helped. Mine was fairly mild on my scalp, though. I've used a sulfur-based treatment for my horse's skin issues for years, yet it didn't occur to me until recently that it could help me, too.
My boyfriend has horrible dandruff and psoriasis on his scalp and some spots on his back and chest. I bought him Jason Natural Dandruff shampoo and it works amazingly. He even puts it on his spots on his chest and back and they are now very light pink in color and not flakey anymore. It's about $10-12. It doesn't smell great but you can follow it up with a conditioner that's more pleasant.

I wash my hair every 2-4 days with Blonde Sexy Hair shampoo and Jason Dandruff Relief shampoo. I leave in the Jason shampoo a few minutes to let the salicylic acid do its thing. I have found that using both of these products every time I shampoo does a good job at keeping itchiness and dandruff away. I follow up with TRESemme Nourish & Replenish conditioner, leaving that in a minute or so before rinsing. Then I pat dray with a towel, put in Moroccan oil and curl sculpt, and let it air dry.

I do not use conditioner. My hair is really fine but thick, and conditioner tends to weigh it down. I will use conditioner once in a blue moon, also paraben/sulfate free. This is the one I have, but I got it on clearance at Walmart. I let the shampoo sit long enough to basically shave and scrub a dub dub the rest of me.
In my personal experience, I am always going to recommend avoiding sulfate shampoo if you’ve got scalp issues. Legit, the difference was night and day. I will never ever go back.
It helps a lot. The redness is thin skin (your blood showing through). So if you can relieve it some, it’ll help. I’ll admit that it’s a problem I haven’t had to focus on a lot, because I have darker skin. I tend to focus more on stopping the flakes and the pain. The flakes show up waaaayyyy too contrasted with my skin haha
If you’re wanting to try the new routine without breaking the bank, email some companies and see if they’ll send you a foil packet to try. The scalp scrubber is only a few bucks on amazon (I have the purple one) and that super helps with flakes and pain, so if you don’t do the shampoo routes at all, I’d at least do that.
I have really dry, flakey, itchy scalp problems. The Jason Brand of shampoo has been so helpful for me I am very happy with it and would recommend it.

I highly doubt that Solimo is CF. It just does not align with Amazon's stance at all; Amazon is all about doing things as cheap as possible with as much profit as possible. Plus... they don't even care about the safety/wellbeing of their employees, so I highly doubt they care about animals. Until a reliable 3rd party confirms it, I wouldn't trust what they claim.

Vegan and CF coal tar shampoo doesn't seem to exist. I've searched high and low. :( The closest thing I could find is Heritage Store - Pine Tar Shampoo, which focuses more on healthy scalps than dandruff removal.

There are other options for dandruff shampoo such as Jāsön - Dandruff Relief, which contains salicylic acid and sulfur. Or options from Derma E, Avalon, Paul Mitchell Tea Tree (cult classic).

It's just one of the few products where we have very limited choices as vegan. It's really frustrating. Dandruff can actually be caused by a fungus on your scalp (most common) or dryness. If it's fungus then most of these milder options won't work. In the case of it being chronic or fungus related I would treat it like I would any medical issue and use the products I need even if that means they may not be cruelty free or vegan.
I used to be like that - mess up or miss a day and it'd be so itchy and the skin would be so tight and I'd scratch and bleed and pull out my hair.
There's been a couple of things that have stopped that though. First was paraben/sulfate free shampoo (MAJOR reason), and the second was understanding the weather.
I use a combo of dandruff shampoo, coal tar shampoo, and regular stuff to keep my scalp psoriasis at bay. My routine is like this:
Daily: use the daily shampoo (I use L'Oreal Ever line )
Twice a week: I use a dab of the daily plus a dandruff shampoo (I use Jäson )
Once a week: I use a dab of daily plus the coal tar shampoo (not many choices here, so I just use this one )
Whenever I remember, I use a scalp scrubby too, like this weird thingie )
I use the medicinal shampoos with the dab of daily for two reasons - medicine shampoo doesn't lather well, and you're right - it smells terrible. The daily shampoo helps with that.
I can't actually get medicine to my scalp because I'm a girl with longer hair. I'd have to find someone willing to do it for me, and so I go without.
As for the weather bit, it depends on where you live. During the summer, Missouri gets to be HUMID. Air so thick you can cut it with a butter knife. During the winter however, it's SO DRY. ugh its dry. I use a humidifier because otherwise I can't breathe at night dry. This dryness also means that I skip showering/washing my head every other day. That gives my scalp time for the natural oils to come back and give me some relief. I also work in a corporate environment and I just pull my hair back. Even if you can only manage that on the weekends, give it a try.
Do note that these are what works for me. It absolutely does not clear it, but it maintains the size and spread of the problem. It also keeps it a lot more comfortable than it used to be. No more scars, no more bleeding, no more pus, no more bald spots where I was pulling out my hair. :)

I've been using JASON Natural Cosmetics Dandruff Relief Shampoo. It's inexpensive and does the job quite well. Make sure he uses some kind of conditioner to restore moisture. I alternate between this and Peppermint Tea Tree Shampoo from Eden Bodyworks. My hair is very thick and I have a dry scalp so I have to shampoo fairly regularly. I also use a shampoo brush to make sure I really get everything out.

For what it's worth (if you're looking), I use Jason once a week, and L'Oreal in between. They don't hurt my head, but they don't necessarily reduce the coverage area either.

My derm actually told me to try coconut oil to help stretch the steroid foam she prescribed. It was a new medicine at the time and it was crazy expensive per can and she thought I'd need to refill a few times a year.
You can sub in any oil that his skin likes (olive oil, etc.). The oils help with the silvery patches.

It has a strong smell when hair is wet so I ultimately had to stop using it. The best unscented shampoo I've found is honeyskin https://www.amazon.com/gp/aw/d/B013HLLGL0/ref=sxts1_a_it?ie=UTF8&qid=1481089258&sr=1 . They also make a cream I want to try.
Snail goop has really really helped. I put it on my face twice a day and on big bites, scratches etc. I usually put recovery gel on top of snail hoop. I've used mizon and scinic snail.
For my hands I use coconut oil, followed by shea butter followed by lanolin daily.
When I have a scale forming I put snail down first.
I eat avocado a few times a week.
I'm looking at the guerisson cream but I have to research it more for cruelty/ ethical reasons. I'm already using a horse product ( kikamasamune if I read that recent post right)
For me the big things were to keep my hands from getting wet/ chapped. Every time I get s psoriasis flare on my hands it takes months to heal. I pretty much wear work gloves or vinyl exam gloves year round while I'm doing chores.
I also avoid anything that can give me a friction burn. I had a horrible psoriasis patch on my coochie once from a friction burn. Long story short we never tried that particular thing again.
The best advice I have is learn what triggers flare ups. It's taken me years to build my list.
I desperately needed to take counter actions because I didn't want to take the immune suppressing pills my derm wanted me to take. Anything that has cancer as a side effects is a last choice only in my book.

I found this one that contains salicylic acid, and while it's not quite as expensive as the Regenepure, it's got quite a few ingredients that I could do without.
