I cook. A lot. Like everything from scratch, right down to homemade fresh cheese on homemade crackers. The only prepared foods I have in my house are ones I made from scratch and put in the freezer for future use. I use my instant pot all the time. Stews, soups, roasts, pulled pork, stir frys, rice, rice pudding, yogurt - I even can with it. I use it so much so that I am contemplating getting an extra interior pot.
There's one Instant Pot (TM) that has an air fryer attachment. Not cheap. Air fryers do not replace deep fryers. You will not get the same taste or texture. It's sort of like oven "frying" french fries. IMHO it's not worth the extra money. My son has this attachment and he's like eh about it.
Get yourself a nice accessories kit for the instant pot (a cake pan - yes, you can make cake in it!), egg boiling rack, steamer tray) for ~$30 on Amazon to get the most out of this gadget.
Next on your list is a food processor. Just a little one for now, for things like salsa and chicken salad. This is great, bc not only do you have a food processor - you've got a stick blender (smoothies!) and beaters for mixing cake batter, whipping cream, stuff like that.

If you have a microwave, an instant pot, a stick blender, and a stove or burner with a decent quality, heavy-bottomed 10-12" frying pan, you are pretty much golden.
I’ve never used the whisk attachment but the others are great!
