I avoid the problem by buying a U-lock that's beefier than the bike itself.
I've been having good results with the Kryptonite New York Standard bike lock. It's a little pricy, but I have a nice bike, so it was worth the piece of mind to me. It's also very well reviewed and even endorsed by the Lock Picking Lawyer on YouTube.

That will keep honest people honest and buy you a minute or two with the rest. I doubt you can do significantly better lock wise.
I would also hidden install a cellular/GPS tracker so you have some chance of recovery
( this is the lock I have and would get if I were you. Only had one theft attempt I’m aware of. I was doing Uber eats and had the bike in my view outside but left unlocked. I wasn’t locking my bike at the time because my bottom bracket was broken so my pedals were strapped together parallel lmao. I figured no one would want to steal it because they couldn’t even pedal. I suppose it worked. The guy that parked his bike next to me wasn’t as lucky 🙃.
Even since then I don’t lock my bike as much as I should 😅 It’s usually ~20ft. away from me and in my line of sight or I’m just running in and out of an apt. Bldg to make a drop off. I plan on getting air tags as well just in case)

I also have this u-lock for quick in-and-outs, and to lock my back wheel when I’m going to be away from my bike for awhile
I'd get this, and if you enroll in their anti-theft protection program, they'll pay you back (the price of the bike) if your bike gets stolen.
I've read a couple of places that you should plan on spending about 10%-15% of your bike's cost/value for its security. So a $1,000 bike might have to spend $100 for the security. Seems reasonable, and really depends on how important (or how much you value) your ebike.

With loops to avoid having your wheels pinched.Also ensure your seatpost doesn't get pinched.
If you prefer a faster, lighter bike, then get a gravel bike and add mudguards.
Cable locks are useless as primary defence.
