Would this be good?
Finally got around to bottling this mead. If I recall, I pitched about 2.5 gallons of mead with about 5 pounds of honey late september last year. I think I bought special fancy "mead yeast" from the brew shop. I used two 1 gallon carboys and 1 half gallon carboy.
I didn't take great care of it (it sat on its lees in primary for about 4-5 months before I racked it to settle the sediment) but it came out drinkable. I'd describe it as sweet and quite alcoholic. Tastes like mead. At least one third party has endorsed it, but I'd think of it more like a dessert wine than anything really drinkable. It tasted a lot better watered down a bit by sparkling water -- it's worth noting that instead of watering it down to top off in secondary, I simply used some of the half gallon carboy and drank the rest to test it out.
I'm going to move soon, and when I'm settled I'm going to pitch a new 2 or 2.5 gallon batch. If I could get it to be drinkable quickly, I'd be really happy. Right now I've got Syr Michael of York in mind for that reason, but I might not use nutmeg and just leave it a little simpler. I'm wanting to try an ancient orange mead at some point too.
For the labels I just had an idea and decided to get a cheap printmaking kit from amazon, having learned the basics in high school art class years ago. I think it came out pretty neat, I'm happy with it. Next time I make a label I hope I have more dates and the ABV to write on it :P.
