You wouldn't have. The chronometers were kept below, in protective cases. Other watches were set by them, and then they went back under lock and key. If you've got time for a good read, I highly recommend "Longitude".

Basically shipwrecks were losing colonial powers tons of money due to navigation issues. Latitude can be calculated easily by the sun but longitude needs a reliable way to tell time to calculate and prior to the invention of the balance wheel, that was impossible because pendulums don't work on boats.
Highly reccomend reading it. One of my favorite books.
