I bought a beautiful blu-ray set on Amazon on Prime day. It has 31 discs and tons of special features. Here it is.
There are extended editions of the first two movies. They air on Freeform whenever they do marathons and there are blu-ray releases. It’s just the cut scenes added back in. 3-8 don’t have these editions though.
This is just plain wrong. I actually have DVDs from a limited release they did (I think in 08) of the original Theatrical versions. People act like they straight don't exist but they are just very rare. But you can bet if those DVDs exist then Lucalfilm/Disney has digital copies somewhere

Lucas did release the theatrical versions on DVD. Here's a box set that contains both versions, but I remember getting the single DVDs from Wal*mart for a lot cheaper.
There's actually an English-subbed Blu-ray box set of Anno's three live-action films from 1998-2004 (Love & Pop, Shiki-Jitsu, and Cutie Honey), but it's rather expensive by Western standards. Of course most individual Japanese movies' BD/DVDs cost in excess of 4000 JPY, so its price isn't too surprising in that context.
They released a dvd set of the OG trilogy that has 6 disks, 3 are the "enhanced" ones and 3 are what I'm pretty sure are the original ones. So unless I'm mistaken, there are copies left that aren't VHS or whatnot.

Which version is better? The special edition version from Amazon JP or the special edition for Funimation? I'm having a hard time deciding, they are both roughly the same price but they offer different things that are good in their own way.
As far as I know, the Hogwarts Collection includes all of the movies in their extended/ultimate edition formats. The first two movies came as extended editions, then the next four as ultimate editions, and the final two as theatrical releases plus extra content.
The Hogwarts collection is 31 discs of all the movies and all the bonus content that came with all of them, as far as I'm aware. It'd make an awesome gift!
I found it on this sketchy video upload site that had no subtitles and required me to embed them into the video, but it's definitely out there.
Of course, you can also get it on Blu-Ray (subtitled, too!) if you shell out $170 for the Hideaki Anno Live Action Film Collection.
There is this one. They had much nicer Phase 1 and Phase 2 sets at one time, but I don't see those now.

If I'm not mistaken, the series is the regular BD release. There exists some really fancy versions. Notably this one on Blu-ray.
As for the film, I have a pretty cool one with a book full of artwork.

I waited a couple years for the Hogwarts Collection to go on sale. It has the same 31 discs as the Wizard's Collection without the huge (though admittedly cool) box. I have been on the periphery of this very heated online discussion over the years around bringing back the original movies. I'm a bit confused though, is it just a question of bringing them to blu-ray? I have owned this set for a long time and I thought their selling point was the theatrical versions. Is there a different version than that people are excited about?
Eh I don’t have cable so I’m kind of full of shit. I thought cable was like $150 or something? I haven’t looked into it in years though. I also don’t buy Blu Rays but I found this pretty quickly. So IDK it was kind of a joke it just seems like you might’ve been able to save a few bucks.

I currently own the 'Ultimate Edition' Blu Rays, each one has 2-4 discs and a bunch of extras. It's not a collection, each movie is separate and last I checked they're out of print. The Hogwarts Collection ([link]) is probably the best one still on the market; any other boxset for the most part is out of print. I'm working on the 4K editions now.

I'm deciding which to buy so I have a couple questions for you if you wouldn't mind.
1) Is the canvas art looking thing that says SAMPLE the postcard?
2) Do you know when the Early Purchase Exclusive ends? The bookmarks seem cool but I wouldn't want to pay thinking that they'll be included if they're not.

I was looking at the box that had both of these at Wal-mart but I remember that looking at vol 2 on amazon the back of the box says that Godzilla 2000 and Godzilla Vs MechaGodzilla II have English audio. Are those English dubbed and have no Japanese audio or is it some weird labing thing going on?
EDIT also do any of the movies in Vol 1 overlap with this Godzilla collection because it looks like 2 of them do. [link]

That's the one you want. For blu ray, some (Smog Monster, Sea Monster, Gigan) have good stateside releases, most though you'd have to get the Toho blus, which are great but undubbed and unsubbed.

If you have the funds, or can find a good deal, I'd highly recommend the Hogwarts Collection. The special features alone are worth the price of admission.

Amazon had this set for really cheap. I think my husband got it for $80 (he says $50). It's well worth it.
There are theatrical release versions on DVD. They include 2 discs of each movie, the 1st special edition and the "Han Shoots First" Theatrical editions.
The special edition of the original trilogy on dvd from 2008 includes the laser disc versions on the second disk. They are stereo only has they didn't even bother to convert the ac3 track:(
This is the prequel box set. It includes all of the remastered versions, and the theatrical ones too.
