You are likely never going to see rotary knobs because they would require a stepper motor to move the knob to the right position whenever speed changes are done remotely. Just like you don't see any smart old-school rocker switches that stay up or down based on on/off. Everything is momentary toggles.
I guess somebody could make a momentary rotary knob that you jog left or right for faster/slower. But that wouldn't be a very good analog for what people are used to, so not much reason for it.
If you can give up on the rotary part, there are lots of options. THis one does fans and lights.
Do you already have Caseta switches elsewhere in the house? If so, why not just use a Caseta fan fan control on the fan switch and a standard Caseta switch/dimmer on the light switch?

Ah ok so that won’t work. I don’t have much of an answer for your 3-way set up but here are some alternative suggestions to explore: - how much do you need the 3 way setup? Can you turn it into a 2 way, ignore the second switch and then install 2 separate switches, where your now one switch is, for high and low? (assuming there are separate wires or you have the ability to run) - I was searching for a similar solution when I installed my ceiling fans and the best dedicated smart switch I could find was from Lutron . I decided against it because Lutron has their own protocol which means yet another hub in the house. It is highly rated though.

It adds value to the house. Buy a pico remote and you can turn it on and off laying down. Assuming you don't have voice automation set up.

A separate switch, dimmer or not, for the lights would complete the project. I didn't see a smart switch that would control both fan and light. Seems like such a thing should exist by now. I would be interested in one.
If you are not comfortable with electric wiring you probably know someone who is. It looks pretty straightforward. If you find a "combo" switch please post it.

They likely also sell it at the big box home centres (the orange one had it here).
I would look into this product and see if it's what you need; most ceiling fans use 1 of 2 types of wiring from what I can recall; this switch takes up 1 gang and controls both the light and the fan, assuming your fan is compatible.
As-is it would be controllable using the Lutron app, and if you get a smart bridge, you can connect it to the bigger home automation brands. The pro smart bridge is only needed if you want to be able to customize the wireless pico remotes.

Eitherway any fan switch with dimmer on amazon like the Lutron Maestro is for 54 bucks. I dont like the looks of the other non-smart fan switches with dimmer where the slider looks old school from a county hospital (ease for the patients to turn up or down the fan controls).

I just bought the Caseta and installed it in my apartment, it’s perfect! I’ve included everything you’ll need to control any DC fan below. If you use Philips Hue as your lightbulb, you won’t need a dimmer, but that combo I linked is cheaper than the bridge alone. Since I already had Philips Hue, I just kept the switch installed and bought a 2-gang wall plate with a single decora cutout and only installed the fan control unit. Hope this helps!

I use these with my fans. You can pair the Pico remotes for the fan controller and have a remote anywhere you want it.
