I concur with everything you said. There definitely is a gap in the market for in-depth tutelage in comprehensive CAD drawing.
Aside from working as the product design engineer I had mentioned, I have written (PDF format in the past) and now produce video tutorials professionally for a CAD system since 2004. There was so little in the way of learning aids for the program back then that when I felt confident enough I began to create full project tutorials, key stroke by keystroke. Folks saw the effort that went into them and convinced me to open an on-line shop and sell them. I took that to heart and have done it since. I guess the point I am trying to make is that to make comprehensive tutorial is a huge undertaking and each one requires weeks of work. So few people want to put in the effort or have the time to do so.
In all areas of my work experience I am self taught, even the engineering. Like you, I always wanted to find in-depth help and it was always so elusive. I made a point of always talking with vendors and suppliers to expand my knowledge. Even still, I often felt in over my head. But through persistence and always doing lots of research I managed to keep my employers and clients, when I did much freelancing, happy. No one ever complained about my drawings so I always endeavored to keep improving as I learned a little more each day.
Although I could never make myself sit down and read through the whole book, this linked one, is one I used for reference on occasion.

Of course, you might need to look for materials that are better suited to furniture. But I do believe that drawings for any industry can follow a similar look and layout.
