wonderpens.ca? that and I'd try amazon.ca -- you can scrounge up weird free shipping from third party sellers if you dig a bit (for example, this one's only a buck more than us amazon, after conversion.)
And to answer your broader question, i usually buy online. Just because it's easier to get exactly what I want, or to find the best price if it's something I' trying for the first time. I only really buy in store if it's something I also ready know i like (that is, for convenience purposes).
Maruman Mnemosyne. Wirebound, semi-hardcover, great fountain pen paper, ~$6-7 for one notebook, and it has 80 sheets (160 back and front): https://www.amazon.com/Maruman-Hardcover-Executive-Notebook-N195A/dp/B00TES8EHA/ref=sr_1_3?ie=UTF8&qid=1535955234&sr=8-3&keywords=maruman+mnemosyne
I've been using these for meetings and for other work related needs. There are also different sizes in case you want something bigger or smaller than A5.
Maruman Mnemosyne makes double spiral notebooks in multiple sizes with really great paper that's laid out perfectly for recipes. Both covers are made out of thick plastic material. They hold up well, ink looks great and no bleed-through. I use this one for most recipes:
Not a dumb question at all! It’s a Maruman Mnemosyne a5 notebook. It comes in different shapes and sizes. The paper is my favorite and I prefer a spiral notebook. Price can vary depending on where you buy it.

For journaling, I use a Mnemosyne 195. I prefer spiral bound and it's one of the few spiral notebooks that can handle fountain pen ink that doesn't have really large bindings. It's a very nice little notebook.
For daily note-taking, I use dollar store notebooks. They're a brand name "Jot" and come in small sizes. These ones with the kitschy inspirational covers work very well (the dino one is my favorite) along with these more subdued ones. The same brand also makes steno notebooks, but they are a different paper and don't work as well.
I take notes daily on what I'm working on just to keep track (in addition to having a digital to-do list with Todoist) and I use these pens and this notebook and they both make writing more "pleasurable", I think.
