Plenty of responses so far so I'll just second the proposals already made and add a couple new ones:

1. As mentioned, for articles with experiments and recipes: Kenji / foodlab / seriouseats. For videos with taste tests and process, Sous Vide Everything. I also like the anova app for quick time and temp recipes for various proteins.

As mentioned, steaks are an easy go-to (ribeye @ 137 or NY @ 130) because of the consistent results, but I think pork and chicken are easier to overcook on a grill and so are more impressively tender and juicy out of the sous vide. I'd start with a pork chop or tenderloin. So good. Also, I saw one non-protein suggestion that you liked and I thought I'd add custard. Great crème brûlée or flan, and no need to temper the cream. You can make it in a bag and pipe into ramakins, but I make mine directly in a bunch of these that work great. Try this recipe that has worked well for me. I've added vanilla or fruit to that with good success too.
4. YES! Feel free to roam around. Thats one of the best parts about it. I've never seen a recipe that has a strict time you need pull the food out. Its always a window, like 2-4 hours or 24 - 36 hours, etc. No babysitting involved as long as you don't lose too much water over a long cook.
5. Experiment! It's not scary at all and a fun new kitchen toy to play with.
