This is definitely what I’d do, for sure. We hunt a managed group hunt every year, and I’d say at least half the folks show up with small vehicles that have tow hitch carriers on them. One of the guys just ties his deer onto the roof of his sedan lol.

I’ve got a cargo basket similar to this one, which is both hitch-mountable and hitch-mountable. I haven’t done it yet, but backing into superchargers would be extremely annoying (if even possible).
My dietary advice is to avoid prepackaged snack food they're the devil in disguise. Fresh salad can keep for a couple days and uncooked rice/beans will keep indefinitely as far as I know. I'd get something like this that you could store a cooler, food, supplies, and utensils on. My ultimate recommendation is to get a generator and run a rice maker and an air fryer on it, if you don't want to go that route maybe a butane/propane stove, and as a last resort a 12v hot plate would get the job done well enough.
I do not have your experience selling bike racks and such, but a hitch basket with DIY crossbars to fit the wheel base (mounted below the bars that run parallel to the bumper) and a top tube clamp set up seems like it would work well
