Does Ariel Rider X class not have mirrors?

Figure out how you're going to lug things around on your bike. I have a milk crate on one of my bikes, panniers on another, and a janky small steel-mesh box on another. You can also go for front baskets, I've installed some on other ebikes and they are decent.
Think about warning/gps stickers or actually putting a gps tracker on your bike or do both.

I have the Mirrycle bar end mirror and originally had it positioned sticking out beyond and above my flat handlebars. After running into the same issue you did when maneuvering it through tight spaces, I adjusted it around so that the mirror is inside the space of the handlebars, underneath it. I also think it is giving me a better view of behind me, especially if I shift my head side to side a bit.

I bought just 1 of them to try it out first for my wife's XP 2.0 since she usually rides in front, we keep our son in the middle and I'm in the back. It's been great. Note, all of these in the handlebar tube style mirrors, while for sure the way to go, do require that you cut out the rubber that covers the center of the end of the handlebar tube.
I ordered another mirror which was just delivered a moment ago to put on my XP 2.0 that I'll be giving to my son once my XPremium shows up.

Sounds like you've got it figured out, as far as saddles go I'm not familiar with your butt so I don't think I can give a 100% reliable recommendation! Haha, but I'm rocking a woman's comfort seat, it just so happens to be thinner than the stock saddle. The suspension seat post isn't the best quality, but at the end of the day you have the front suspension fork too so it doesn't matter than much.
I did have to cut the left handlebar grip end out to make room for a mirror. I’ve found this one to fit my needs after trying several others. Large mirror, doesn’t affect fold (installed upside down) swings outward far enough so it’s not reflecting my body.
I have one of these and it is pretty good for rear visibility. It is glass though and will shatter when banged which is easy to do since it sticks out much! I see them on so many bikes locally too.
agreed. I've used a mirror ever since I bought it. Never go anywhere without it. I use a Mirrycle MTB Bar End Mountain Bicycle Mirror on my left side to see cars and whatnot coming up behind. By the time it's warm again this coming spring I think I might add one like OP suggests to the other side because I want another but just know I'll break at least one with the then ultra-wide clearance, and I want to lessen the cost. Either that or maybe helmet mirrors.

Anyway, you (along with others) convinced me to go with the rideal. Left Washington State yesterday for its long journey to Massachusetts. FedEx claims I'll have it next Wednesday.... But I'm not holding my breath.

This is expensive, but comes in very handy for loading and unloading ebikes into a truck bed. Because it's hard for 1 person to lift up a 60+ lbs bike into a truck bed without getting a hernia.

There are several rear blinking lights to choose from. Just pick out a good one that will fit your bike frame.
Also, invest in a quality helmet that fits your head.
I splurged and bought one of these electric pumps, and it comes in handy to top off the air pressure every week. I don't carry it with me when I'm riding, but it's a luxury to have before the rides, because your tires will slowly loose pressure over time, which will effect rolling resistance, and decrease your range drastically if you don't stay on top of it.

This was actually my third mirror, and has lasted the longest. I bought it from a local bike shop, but found something similar on amazon.
I like it better than my past mirrors, because since it has two points of adjustment, when my scooter falls over instead of breaking it will usually just move out of position. My past mirrors would just break when my scooter would tip over and hit the ground.
