Yep, with a portable stand such as this Mobile TV Cart with Wheels for 23-55 Inch LCD LED OLED Flat Curved Screen Outdoor TVs Height Adjustable Shelf Trolley Floor Stand Holds up to 55lbs Movable Monitor Holder with Tray Max VESA 400x400mm https://www.amazon.com/dp/B07QYLSWCK/ref=cm_sw_r_apan_glt_i_DPGCXJ6FK6T2AKHD27RE?_encoding=UTF8&psc=1
One thing I never see on here is the roll cart TV stand that I bought on Amazon. They are great and she could place it in front of that fireplace and roll it out of the way if she actually ever decides to use the fireplace. Here's the one I have, and it even has a little shelf for her laptop on the foot stool if she is so inclined. https://www.amazon.com/gp/product/B07QYLSWCK/ref=ppx\_yo\_dt\_b\_search\_asin\_image?ie=UTF8&psc=1
Definitely go with a rolling stand. I've got a similar room structure and it really helps being able to move it around to maximize space. It's awesome. I just realized that compromising on a single monitor would make me choose one that wasn't ideal for either games or work, and it just made more sense to get one of each :) Since I didn't have the desk space for 2 I just got one of these and turn my chair to the right whenever I want to play something.
It is lower than you think. I have this stand: https://www.amazon.com/gp/product/B07QYLSWCK/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1
I tweaked this setup a few times before I got it right. Always going lower though, you don't want to have to look up.
Here it is. Been very happy with it and it's priced well. Company store on Amazon has some other carts too -

Here's the stand I have and have been using two years and I love it. https://www.amazon.com/gp/product/B07QYLSWCK/ref=ppx_yo_dt_b_search_asin_image?ie=UTF8&psc=1
She might need the next model up since that TV looks bigger than 55", but you get the idea.
Can't think of anything that fits your description. Sounds like you may be best served by a Mobile TV Cart. https://www.amazon.com/Outdoor-Adjustable-Trolley-Movable-400x400mm/dp/B07QYLSWCK/
Yesss. Great idea. This one is pretty cheap, too.

I bought this mobile tv cart off of Amazon for $80 and haven't regretted it for a second. TV can be wherever it needs to be whenever it needs to be there.

The stand is one of these. Not the best, but it works fine with this old 43" TV.

I have bought a couple of these TV cart they have a DVD shelf and wheels. Adjustable too. $79.
I know a wall mounted TV looks better for pics but I strongly suggest you get a smaller screen and mount it on a portable TV stand. I have this one https://www.amazon.com/Mobile-Wheels-23-55-Plasma-Screen/dp/B07QYLSWCK/ref=sr_1_6?dchild=1&keywords=tv+stand+portable&qid=1596354646&sr=8-6 and have zero complaints.

Being able to reposition the TV in front of where ever you're working out is a game changer imo. Otherwise, you'll constantly be straining your neck or even having to just listen, which sucks. You'll get pulled away when you wanna watch and you'll lose time and thus waste potential sets and therefore gains.
