Here is what I would do if I were in your situation.
This is the best piece of advice on here, OP. While the normies or healthcare practitioners advice does lack empathy and instruction, it does not lack truth.
To jump off of what u/spankybacon is saying... About 8 weeks ago I started carrying around a moleskin with me everywhere. And in the moleskin I would take out two pages..
The page on the right is labeled "Weekly To-do's 09/06 - 09/12" and under it will be the goals that I am trying to get done that week.
The page on the left is labeled "Daily Reminders" and under it I label a M/Tu/Wed/Thur/Fri/Sat/Sun. And I use this for things that come up during the week that I dont want to forget and to track my progress at the gym or at work.
Then every Sunday, after breakfast, I sit down and plan out my following week. From my calendar on my phone or reminders from my email.
This is great because you can constantly open the moleskin and it not only provides you with the reminder you need, but its a way to provide yourself with positive reinforcement. You can see the progress you have made day-by-day, week-by-week. It's the positive dopamine hit your brain so desperately needs.
Trust me when I say that this has absolutely changed my life and most importantly has made me feel really good about myself and my future prospects.
While we lack the wiring of neurotypical individuals, we absolutely can overcome some of the more detrimental side-effects. Just takes constant reminder and positive reinforcement.

Daily journaling is a great habit to have. On mobile or a laptop is fine.
But I suggest a physical moleskin notebook by your nightstand. Something like this
Have tried out moleskins? There usually hit or miss for most people. I use them for drawing/sketch and they hold up pretty well for both Muji pens and Midliners.

The Power Company has a process journal that could work well for what you are looking for.
I use a black moleskin journal to keep track of my progress, this is the one I bought off amazon.
I write my focus for the day, the drills or workouts that I do, how the session is going, particular things that I noticed while climbing, strength training exercises (sets and reps), my start and end times for my climbing and workouts (It is nice to track how much time you spend at the gym each week, and what portion is time spent climbing vs. strength training).
I don't write the individual climbs/grades that I do. I don't see much of a point to this, as gym grades are not very consistent and they aren't up for that long. When I am outdoors, I write every route that I climb.
I also tried keeping notes in a spreadsheet on my phone, but I like writing better, and it keeps me off of my phone while training.
I use a Large/Classic/Ruled Moleskine for my journal, in which I make (almost) daily entries. Contrary to popular opinion, I actually find the paper excellent for use with my Sheaffer Imperial 440 (fine / medium nib, eBay link), and the Waterman Intense Black Ink.
I use a Medium/Dotted Leuchtturm1917 for my planner (which uses the Bullet Journal method). I also write in this one with my Sheaffer Imperial 440, however the Leuchtturm1917 is probably not a purchase I'll make again. The ink dries very slowly, and thus a lot of my writing ends up smudged, competely unacceptable in a day planner. I do however, love the size and material, so I may experiment over the coming months with other pen and ink combinations (so, my opinion may change).
I'm a college student, and as much as I would like to take notes on Extra Large/Classic/Ruled Moleskine or the Leuchtturm Academy Block systems (which I can't find on Amazon), I don't have that kind of money. Instead, I use cheap, Mead, college ruled notebooks; my always reliable Sheaffer is used here too, and I've had no trouble thus far.
When I write for personal reasons (drafts of articles, or maybe my never-to-be-finished novel or screenplay), I use always reliable legal pads. While these may not be fancy notebooks, I've never been able to find anything else that gives me the feeling I get when writing on these. I don't know why, I just like them. I quite literally buy them by the dozen. I use my Sheaffer with these too, because it's my favorite pen and seems to be limitless. However, when I was writing my autobiography, I used a Pentel GraphGear 1000 (which was originally purchased for ledger work and work with graph paper, but got repurposed), and then my first fountain pen, a medium-nibbed Lamy Safari (again with the Waterman ink). I still use the Lamy with my Rhodia Classic Graph Pad, which I find ideal for my usually short shopping lists.
I also keep a plethora of Expedition Edition Field Notes books, and I write in those with the FN-06 Clic Pen(link to Field Notes shop, as I couldn't find one straight to then pen, but I use any ballpoint that happens to be around, I think I got a few of these as a sample or something). I only use my Field Notes for quick notes, usually these little notes are transferred into either Simplenote or The Journalist (I haven't decided which of these I'm actually going to use, yet).
As for writing instruments, I keep an extra-fine nibbed Nemosine Singularity Demonstrator filled with Noodler's Red Ink for editing. Though, I don't know why I chose red ink, because I actually prefer to edit in a medium nibbed pen with blue ink, and I don't have the ink or a pen dedicated to that purpose.
+1 for using OneNote as primary for notes. For a physical notebook try Mokeskine classic.

I assume that since you bought a 3 pack, you bought the cahiers, which only have 80 pages. Have you considered buying one of the classic Moleskine notebooks? They have 192 pages each.
I'm personally not a fan of the cahiers except for a pocket notebook that is pretty disposable.

Both of those versions have lined paper and are roughly 5.5" x 8". They also have the extra large size, which is closer to a sheet of paper.
