Okay, I recently started growing my very first scoby in this fermentation crock. everything seemed great, sort of slow to see much activity (started this 3 weeks ago) but otherwise seemed to smell/look good. After a short while I realized liquid was slowly draining out from around the spigot. although I do believe I was able to successfully grow a scoby in this vessel with what remained in the crock I don’t know if there’s any reason why I can’t or shouldn’t use what liquid remains/the newly formed pellicle to start F2? it does seem a little acidic upon taste (likely let this go for too long putting off dealing with this problem) pH test strip reads somewhere between 2-2.5. also if anyone has had this problem with this specific crock did you need to replace it or did I improperly reassemble after sterilizing?
