I did a triple vesa mount— laptop mounted in the middle and screens on each side. If your laptop sits on the table, you are bending your neck to use it which is bad. Get something similar to what is linked and then also get a laptop tray. I also like to have one monitor portrait- positioned for email inbox or long spreadsheet and then the other landscape (traditional) positioned for website and other stuff.
May need a docking station to keep cords under control.

My ultrawide monitor in the middle is 30in, so it does work with monitors larger than 27in - but I probably wouldn't use this exact mount if you have any monitor over 30in.

You can only adjust elevation per-row while OP's can adjust per-arm. The row of three is going to have better balance but you're also going to lose some of your leveling on outer monitors over time. It's going to work fine in most situations (it's the same kind I use right now). Especially if you are setting up a grid that isn't going to get moved a lot.
I will say I am working with different size monitors and a non-grid setup. If I was ordering again today I'd go for something like this instead. It provides the extra degree of freedom like OP's but also has the integrated pillar to handle height changes without modification.
My one big tip is to take the rated weight capacity and lop off 20% if you don't want to be frustrated. If it is going to be moving a lot or the arms are fully extended I'd say half it. Oh and get a big roll of double sided velcro at the same time. You'll appreciate being able to cut wraps to length and undo/redo them as needed.

Bought about a month ago. Quality could be better, but it works fine. Got it for a different setup before the ultra wide. It worked out because the right arm was longer than a single or dual monitor stand, so it let me place the mount at the back of the desk and extend the monitor far enough to get the correct angle.
