Looks wonderful! You might not be able to make parmesan, but you can make mozzarella. Amazon's got these great little kits, it's enough to make 30 batches of cheese!

There might be better ones though.
My only real advice is to pick good milk. That is the biggest thing that will make the cheese taste better than what you usually buy.
Oops. I realized I had not mentioned that you really want non-homogenized milk. The stuff with cream on top. You can get it at Whole Foods or farmers markets, places like that.

I think allowing yourself a set amount of cheese at a set time (a planned time/date, in other words don't pig out when you find yourself at a party with a platter of kraft singles and other crappy cheeses) would be a way to enjoy it without trying to find some subpar replacement for it. Cheese is delicious!
EDIT: Oh! You could also make your own cheese! That way you get it but have to work for it :) I've done homemade mozarealla before and it's delicious!
