While there are reasons to question Turkus’ opinion of these events, it’s a great read. Turkus did take down Murder Inc. and there’s enough that is verifiably accurate (most of the inaccuracies are likely Turkus’ self aggrandizement) for it to serve as a resource for what you need.
Puzzo’s books are fiction, but they’re good books and he almost certainly had insider knowledge of the mafia when writing them. So they aren’t a bad source either.
I can’t find all the transcripts from the McClellan hearings, but here’s a place to start:

The transcripts of those hearings should tell you a lot about what you wanted to know.

This one is more for fun, but it has a decent amount of information on the workings of the Jewish mafia (which was closely allied with the more famous Italian one) and the personal lives of some of its various members.
