I don't have one myself, but I think the Mustart TravelMaster is pretty similar in functionality to the Tesla Mobile Connector but with J1772. As mentioned you can also just get a Tesla Mobile Connector and j1772 adapter to do the same thing for similar price (maybe even less?).
I bought this EV charger which uses different adapters on amazon. Mustart EV charger
It’s been great so far. We use the charger that came with the car only for 120v charging and the Mustart is connected to the dryer plug. We live on military base housing and not allowed to install a Nema 14-50 but using the 14-30 works well for us when we need a faster charge. We usually just use the 120 plug though.
Yes. Not sure about the OEM charger cord for Pacifica, my Bolt is 120V (5-15 plug), but can use 240V with adapters, though only at 12A (~2.9kW). Many stories of people buying parts at Home Depot and using them with the OEM EVSE cord.
For max flexibility, something like this with adapters for whatever outlets you run across can do the job. This model actually self adjusts based on which adapter is connected, so on a 14-50 it gives the full 7.7kW.
That's going to be a long drive back! Definitely some cool places to stop along the way. Make sure you pick up a charger with multiple NEMA adapters so you can plug in wherever you find an available plug and get some good juice. I'd recommend something like this:

Which will adjust your amperage to match the plug you're attached to automatically. RV Parks are a good spot for this, if you can find one near your hotel, and offer to pay for the electricity.
If I were to do this trip I'd take a week and check out all the stuff along the route:

On the list:
And each of these has the added benefit of charging opportunities!
You want the Mustart Travelmaster which comes with 14-50 and 5-15 adapters and then also get the 6-20.

I'm guessing if I bought something like this that it would guarantee I could plug into RV sites with a 1st Gen Volt.
I had not seen this before, it looks very tempting, and is available with Amazon Prime:
Short answer: You can, but only in optimal conditions. I don't recommend it.
Long answer: I use a kill-a-watt to charge my Clarity PHEV, but this is a special case. As a PHEV, it charges for a maximum of ≈8hrs at a time, at 1250W. The outlet is metal-housed (good for heat dissipation) and ≈15ft from the breaker (good for fire prevention). Most importantly, the charging cable is 10AWG. For a brief time, I charged with a 16AWG cable, and the kill-a-watt contacts got suspiciously hot.
If you're using a proper BEV, charging for long cycles over 1300W, and your outlet is buried in the wall, there's a lot that could go wrong. If you want and off-the-shelf way to measure power consumption, I'd recommend getting a Level 1 or 2 smart charger like this one: https://www.amazon.com/MUSTART-TRAVELMASTER-Intelligent-Identification-Auto-Adjusts/dp/B07RLQXMN5/ref=sr_1_3?crid=7KJOKT3M8CX4
If you're on a penny budget, and not afraid of a bit of DIY, I'd use a CT-based watt meter like this one: https://www.amazon.com/Current-Amperage-Voltmeter-Multimeter-Transformer/dp/B07JB9B2QL/ref=sr_1_6?keywords=ct+watt+meter
